Well for starters, in-season tomatoes and peaches offer incomparable pops of savory umami and sweetness. Then peppery arugula and smoked almonds join forces with wisps of salty manchego cheese and rich serrano ham. The finishing touch is a simple sherry vinegar vinaigrette that dresses the salad with vibrancy and brightness. It’s a quick, gorgeous tomato salad recipe that’s quick to throw together and highly rewarding. Keep the Spanish vibes going by swapping the smoked almonds for Marcona almonds. They’re a splurge, but these buttery, salty almonds with a soft crunch are incredibly delicious. Ingredient Substitution: Prosciutto is a great swap for serrano ham. They are both salted, but prosciutto is salted less, kept in a humid environment, and dried for less time than serrano yielding a sweeter and fattier mouthfeel. Serrano ham is heavily salted and cured in a drier environment, resulting in a meatier flavor and drier texture. Ingredients 3 Tbsp. sherry vinegar 1 1/2 tsp. Dijon mustard 1/4 tsp. freshly ground black pepper, plus more for topping 1 tsp. kosher salt, divided 1/2 cup extra-virgin olive oil 2 lb. cherry tomatoes, halved 3 medium peaches, cut into small wedges 3 cups loosely packed arugula 2 oz. (about 5 slices) serrano ham or prosciutto, torn 2 oz. Manchego cheese, shaved (about 1/2 cup) 1/3 cup coarsely chopped salted almonds (preferably smoked) Directions Whisk vinegar, mustard, pepper, and 3/4 teaspoon salt in a small bowl until combined. Gradually add oil in a thin, steady stream, whisking until emulsified. Arrange tomatoes and peaches on plates. Sprinkle with remaining 1/4 teaspoon salt. Top with arugula, ham, cheese, and almonds. Drizzle with vinaigrette and lightly sprinkle with pepper.
