Upgrade store-bought mashed potatoes and save yourself time on Thanksgiving (or any day of the year, really). This trick couldn't be simpler: everything gets combined in one pot until the cheese is melted and the potatoes are creamy. Whole-grain mustard is a surprising flavor upgrade, and sour cream adds a subtle tang. Choose sharp white Cheddar for a rich and decadent flavor, or try Gruyere for a nutty, French rendition. Don’t forget to douse the potatoes with melted butter before serving.

Ingredients

  • 3 to 3 1/2 pounds prepared mashed potatoes

  • 8 ounces sharp white cheddar cheese, shredded (about 2 cups)

  • 1 cup sour cream

  • 3 tablespoons whole-grain mustard

  • Kosher salt (optional)

  • 2 tablespoons unsalted butter, melted

Directions

  1. Combine mashed potatoes, cheese, sour cream, and mustard in a large pot over medium-low. Cook, stirring often, until potatoes are warmed through and cheese is melted, 10 to 15 minutes. Season with salt, if desired. Serve topped with melted butter.
